From 1960s Saigon to opening in 1980s New Orleans, Phở Tầu Bay has been enjoyed by locals for more than forty years, welcoming generations of regulars alongside visitors like Chef Emeril Lagasse and Anthony Bourdain. Inspired by Vietnamese street-side shops and the translation of its namesake, “Airplane Soup,” the new menu nods to its Viet roots and NOLA charm.
